Kumquats are a delightful, surprising fruit. Their tart, sweet combo makes them easy to pop in your mouth. They are great for topping salads or yogurt, but even better in this kumquat champagne cocktail. Tip… after you make the simple syrup, save the candied kumquats as garnish for a dessert.

Ingredients:
- kumquats, sliced thinly
- 1/2 cup sugar
- 1/2 cup water
- Grand Marnier
- champagne

Instructions:
- In a sauce pot on medium-low heat, combine the sugar, water, and 1/3 cup of sliced kumquats. Bring to a boil and reduce to a simmer until all sugar is dissolved.
- Let the kumquats steep in the simple syrup for several hours.
- In a champagne flute, pour 1 ounce Grand Marnier and 1 teaspoon of the kumquat simple syrup.
- Top with champagne.
- Garnish with more sliced kumquats.
